Dried Fruit / Cranberry Crumb Cake


Ingredients

  • 1/3 cup shortening
  • 1/3 cup sugar
  • 1 egg - beaten
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup milk
  • 1 cup AMPORT sweetened dried cranberries - chopped

  • Topping:
  • 2 tablespoons butter
  • 1/3 cup sugar
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • Directions

    Cream shortening and sugar, add egg, mix well. Sift flour, salt and baking powder. Add to creamed mixture, alternately with milk. Beat well after each addition. Add dried cranberries and mix lightly. Spread into a greased and floured 8x8 inch pan.

    To make crumb topping, cut butter into sugar, flour and cinnamon. Sprinkle over dough. Bake at 375 degrees for 30 to 35 minutes. Serve with topping or ice cream.
