Dried Fruit / Cranberry Coffee Cake


Ingredients

  • 1 - 8 oz. package cream cheese - softened
  • 1 cup butter
  • 1 1/2 cup sugar
  • 1 1/2 teaspoons vanilla
  • 2 1/4 cup flour; divided
  • 1 1/2 teaspoon baking powder
  • 4 eggs
  • 1/2 teaspoon salt
  • 2 cups AMPORT sweetened dried cranberries*
  • 1/2 cup nuts - chopped
  • Confectioner's sugar
  • Directions

    In a mixing bowl, beat cream cheese, butter, sugar and vanilla. Add eggs and mix well. Combine 2 cups flour and baking powder. Add to butter mixture. Mix remaining flour with the dried cranberries and nuts. Fold into batter. Batter will be thick. Spoon into greased and floured bundt pan. Bake 350 degrees for 65 - 70 minutes. Let stand 5 minutes before removing from pan. Before serving dust with confectioner's sugar.

    *You can also use apples.
