

Cream shortening, brown sugar, granulated sugar, eggs and vanilla. Add AMPORT dates, walnuts and coconut. Stir oatmeal, flour, salt and baking soda well, then add to date mixture. Drop by teaspoonfuls onto cookie sheet. Flatten with a glass dipped in granulated sugar.
Bake at 350 degrees for 10 to 12 minutes. Makes about 8 dozen. (The coconut can be omitted and the dates increased to 1 cup to make the cookies chewier.)
