Dates / Banana Nut Flax Bread


Ingredients

  • 1/2 cup AMPORT dates (mashed)
  • 1/2 cup skim milk
  • 1 egg
  • 2 T canola oil
  • 2 bananas (1 cup mashed)
  • 1 1/2 cups wheat flour
  • 3/4 cup AMPORT flax seeds (ground)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • Directions

    Preheat oven to 350 degrees fahrenheit. Lightly coat an 8x4 inch loaf pan with oil. Dust inside of pan with flour. A nonstick pan and nonstick cooking spray can also be used.

    In a large bowl combine the dates, milk, egg, oil and mashed bananas. Beat until smooth. In a medium bowl, blend together the flour, flax seeds, baking powder, baking soda and salt. Add the dry mix to the liquid ingredients. Stir just until blended; DO NOT OVERMIX. Pour into prepared loaf pan. Bake for 55 to 60 minutes or until a knife inserted in the middle comes out clean. While bread is still slightly warm, turn the bread out of the pan. Cool completely before slicing.
    Yield: 10 to 12 slices.
